Tashkent, Uzbekistan (UzDaily.com) — “Tashkent festive plov” has been officially registered as a geographical indication and included in the state register of Uzbekistan, granting legal protection to one of the symbols of Uzbek culinary tradition.
The dish, characteristic of Tashkent city and the Tashkent region, has received recognition as a protected cultural and gastronomic product.
According to historical and ethnographic data, the tradition of preparing plov in the Tashkent oasis has developed over many centuries.
Festive plov is regarded not only as a traditional dish but also as a complex technological process combining elements of chemistry, physics, and biology. It is traditionally prepared at dawn in hemispherical, thick-walled cast-iron cauldrons.
