Jarqurgan Tandir-Gusht Granted Geographical Indication Status
Tashkent, Uzbekistan (UzDaily.com) — The traditional dish of Surkhandarya cuisine, Jarqurgan tandir-gusht, has been officially included in the national registry as a geographical indication. It is now recognized as a gastronomic symbol of the region, with its origin, quality, flavor, and recipe legally protected.
The uniqueness of tandir-gusht lies in the combination of natural conditions and traditional cooking techniques. The hot and dry climate of Surkhandarya, pastures with Gissar lambs, and the use of juniper berries as seasoning give the meat its distinctive aroma and taste. In Jarqurgan, tandir-gusht is cooked in a clay tandoor heated to 400°C for one and a half to two hours, resulting in especially juicy and flavorful meat.
The registration of the dish as a geographical indication provides legal protection for the culinary brand Jarqo‘rg‘on tandir go‘shti and the traditional method of its preparation, securing its uniqueness under the law.
