Tashkent, Uzbekistan (UzDaily.com) — The traditional Karakalpak bread "Chimbay Zagara-non" has been officially registered as a Geographical Indication (GI), a move that authenticates its origin, provides legal protection, and promotes the region's gastronomic brand.

This product is inextricably linked to the history and culture of Karakalpakstan. According to written and archaeological records, the region’s population has been engaged in agriculture since ancient times, with grain crops—including wheat, millet, sorghum (dzhugara), and rice—forming the foundation of the local diet. Historically, grain was processed by hand, and the resulting flour was used to prepare this traditional bread.

The defining features of Zagara-non lie in its composition and preparation technique. Historically, it was baked from a blend of millet, wheat, and sorghum flour, often enriched with vegetables such as carrots or pumpkin.

Today, this tradition is actively preserved. In the Chimbay district, sorghum is grown on an industrial scale, maintaining the bread's status as a staple of local cuisine. The core recipe continues to feature sorghum and wheat flour, vegetable additives, salt, oil, and water.

Granting Geographical Indication status means that the "Chimbay Zagara-non" name and its specific production technology are now legally protected. This measure is intended to preserve the product's traditional characteristics, establish quality standards, and increase its brand recognition both domestically and internationally.

As an intellectual property right, the GI status confirms the product's link to a specific territory and its unique attributes, which are shaped by distinct natural and cultural factors.
